Respiro is the result of the vinification of Sangiovese with a small percentage of Trebbiano white grape, in order to increase the acidity and the freshness of the wine and to mellow the natural tannicity of the Sangiovese itself. This is a wine that has to be appreciated for its liveliness and its easy-drinking capability. Think about it with salami, ham and first courses garnished with meat or tomato sauces.
