Light straw yellow in color, with a mixture of green and golden reflections.
The bouquet is remarkably fine, never aggressive, and recalls herbaceous notes like wild flowers, genista and a touch of pennyroyal and mint.
On the palate, it is fresh and structured, with excellent acidity and ripe, fruity flavors that gradually meld into subtle licorice and honey. Ideal serving temperature is 8-10° C (46.4-50 degrees Fahrenheit). Pecorino’s distinct character and personality make this a versatile, all-around food wine that matches a wide variety of fare, from antipasti and raw shellfish to cheese – both fresh and seasoned, even piquant cheese – to all types of mushrooms.
