Type: red wine
Grapes: 90% Sangiovese 10% Canaiolo
Fermentation: Stainless steel vats
Aging: partially in stainless steel and oak casks for 10 months. Bottle refinement

I have to admit, this Chianti Rufina is more traditional that some of the Chianti Classicos I have tasted in this season. It opens up with firm and lingering fruity notes (mainly plum and rspberry), to evolve then into slightly smokey and balsamic flavors.
Rightfully dry, velvety tannins and a reasonable acidity complete the picture of this wine, which finds its perfect food pairing in roasts and traditional tuscan meals. Still young, great aging potential.

Respiro is the result of the vinification of Sangiovese with a small percentage of Trebbiano white grape, in order to increase the acidity and the freshness of the wine and to mellow the natural tannicity of the Sangiovese itself. This is a wine that has to be appreciated for its liveliness and its easy-drinking capability. Think about it with salami, ham and first courses garnished with meat or tomato sauces.

Type: red wine (organic)
Grapes: Sangiovese Grosso 100%
Fermentation: Steel vats
Aging/Elevation: 42 months in french oak barrels + 8 months in the bottle

San Polino uses organic-biodynamic agricolture and permaculture to produce wines that are the simple expression of their terroir. The wine is fermented naturally, using indigenous yeasts. The wine is covered with extreme mineral backbone. The outer rim of the wine is the minerals and purity shield. Moving towards the center of the wine you have the lovely red fruit and it's like there is a center core with plum, blackcurrant and glycerin which is smiling back to you and it's breathtaking.
The taste has at this moment extremely high profiled acidity. The second you sink the wine your front palate snaps together and minerals and acidity is all around the palate. Again, purity and elegance is what this wine is all about.

Ruby-red. Begins with a light menthol note, then opens to show woodsy underbrush and very ripe-almost overripe-red fruit. There's less of the almost cooked character on the palate, along with an intriguing peppery quality. Sweet and soft, but turns a bit dry on the moderately persistent finish.

Col d’Orcia is the only winery who has produced a “Brunello di Montalcino Riserva 2002”, a vintage which has been particularly criticized by the specialized press. The rigorous selection of each grape of the vineyard “Poggio al Vento” led to obtain a wine which represents a winning challenge. The result is an intriguing product provided with personality and elegance, able to interpret with coherence and originality the stylistic variations of a very difficult vintage. The color is an intense ruby red, while the bouquet is very ample, with the typical aromas of wild ripe berry and plum fruits, perfectly mixed with the spicy scents of the oak. Tar and licorice nuances give great elegance and harmony. It is definitely a wine with great structure and persistence. The ripe tannins give great thickness and suppleness. A right balance between the acidity and the alcoholic content. Long and warm aftertaste.

Viognier vines, planted in the Nineties, produce a very small quantity, about 600 bottles (very low yield per plant), of a white wine for friends and wine enthusiasts. It varies from one year to the next, due to the fact that the vintner tests different wine-making techniques in order to highlight the differences between the various harvests. image of MOSCATO D'ASTI DOCG Massolino 2010 MOSCATO D'ASTI DOCG Massolino 2010

Type: Sweet sparkling white wine
Grape: White Moscato 100%
Fermentation and refinement: steel vats at controlled pressure and temp.

The Moscato Bianco is the oldest grapevine cultivated in Piedmont. The process to obtain this sparkling wines consists of interrupting the fermentation of grape sugars with the help of repeated filtrations and also by using cold temperatures. This way we obtain a wine low in alcohol and very sweet which may be stored for several months and will keep maintaining these features as long as it is kept cold.
A month before bottling, the second fermentation in autoclave is begun by warming up the wine to a temperature of around 18°C.When the alcoholic content reaches 5,5%Vol, the grape sugar is down to 115-125 grams per litre and the wine has thus acquired the correct quantity of carbon dioxide (secondary by-product of the alcoholic fermentation) giving it the pleasant, typical and light “sparkle” of the Moscato d’Asti; fermentation is stopped by using cold temperatures and a sterile filtration that totally eliminates all yeasts; this will prevent undesired fermentations in the bottle.

image of VALPOLICELLA CLASSICO DOC SUPERIORE VALPOLICELLA CLASSICO DOC SUPERIORE "Pegrandi" Ripasso Vaona 2009

Type: Red wine
Grapes: Corvina 40%, Corvinone 30%, Rondinella 25%, Molinara 5%
Fermentation: steel vats
Aging: refinement period of 16-18 months in mid-size barrels + 4 months in the bottle

The different grape varieties, which are harvested (usually during the second half of October) according to their degree of maturation, are placed in wooden boxes for 40-45 days.
The pressing, which is carried out at the end of November, is followed by a fermentation process of 15-18 days after which the basis wine for RIPASSO is obtained. In the month of February, after the vinification of the "Amarone Pegrandi" the base wine is left to re-ferment, partly on its own slightly rinsed marcs and partly on dried grapes originating from the same Pegrandi vineyard. Thus, a wine with a rich body and a strong personality is obtained. The ruby red color, the intense bouquet and the well-structured flavor conferred on it by the semi-withered grapes of the Corvina, Rondinella and Molinara varieties make it a wine of superior quality. It is excellent with important, rich and savory dishes.

Type: Distilled Liquor
Grape: Sangiovese 100%
Distillation: Steam copper alambic
Aging: Steel

As the wine is drawn from the vats, the new wine is separated from the skins, and these are then squeezed to extract any further wine which may be left. In the freshly pressed skins, known as “vinaccia”, 4-5% of alcohol is left and it can be retrieved through distillation. This grappa is distilled from fresh Chianti Classico “vinaccia” using the traditional copper steam “calderine” or cauldron method in a nearby distillery in Greve in Chianti; they produce 3-400 half liter bottles for us each year.
