The tannins are sweet and persistent, as well as the finishing, which is slowly releasing hints of cinnamon and leather. A masterpiece of Tuscan oenology, to be enjoyed with beef, hard cheeses and roasts in general.

The different grape varieties, which are harvested (usually during the second half of October) according to their degree of maturation, are placed in wooden boxes for 40-45 days.
The pressing, which is carried out at the end of November, is followed by a fermentation process of 15-18 days after which the basis wine for RIPASSO is obtained. In the month of February, after the vinification of the "Amarone Pegrandi" the base wine is left to re-ferment, partly on its own slightly rinsed marcs and partly on dried grapes originating from the same Pegrandi vineyard. Thus, a wine with a rich body and a strong personality is obtained. The ruby red color, the intense bouquet and the well-structured flavor conferred on it by the semi-withered grapes of the Corvina, Rondinella and Molinara varieties make it a wine of superior quality. It is excellent with important, rich and savory dishes.

Here are its main characteristics: Colour: straw-like, greenish reflections, abundant foam with subtle and persistent perlage.
Scent: characteristic aroma of toasted bread and hazelnuts, with fruity apple scents.
Flavour: the palate will convey the same aromas perceived with the nose, balanced, refined, fresh and full of life, thanks to the right acidic vein.
Alcohol Content: 12 degrees.
Aging: best if enjoyed in its first two years of life.

The Moscato Bianco is the oldest grapevine cultivated in Piedmont. The process to obtain this sparkling wines consists of interrupting the fermentation of grape sugars with the help of repeated filtrations and also by using cold temperatures. This way we obtain a wine low in alcohol and very sweet which may be stored for several months and will keep maintaining these features as long as it is kept cold.
A month before bottling, the second fermentation in autoclave is begun by warming up the wine to a temperature of around 18°C.When the alcoholic content reaches 5,5%Vol, the grape sugar is down to 115-125 grams per litre and the wine has thus acquired the correct quantity of carbon dioxide (secondary by-product of the alcoholic fermentation) giving it the pleasant, typical and light “sparkle” of the Moscato d’Asti; fermentation is stopped by using cold temperatures and a sterile filtration that totally eliminates all yeasts; this will prevent undesired fermentations in the bottle.

As the wine is drawn from the vats, the new wine is separated from the skins, and these are then squeezed to extract any further wine which may be left. In the freshly pressed skins, known as “vinaccia”, 4-5% of alcohol is left and it can be retrieved through distillation. This grappa is distilled from fresh Chianti Classico “vinaccia” using the traditional copper steam “calderine” or cauldron method in a nearby distillery in Greve in Chianti; they produce 3-400 half liter bottles for us each year.

The taste is definitely full-bodied and alluring, with its dry flavor that caresses the mouth; great balance and elegance. Excellent wine with game food, stewed beefs.

The wine introduces itself with a deep garnet-red, tending to brick-shaded orange on ageing.
The nose is very concentrated and various, with a rich, complex bouquet that mingles violets, roses and raspberries with hints of leather, black pepper, clove and vanilla.
Definitely a full-bodied and opulent wine, rich in soft tannins, already pleasantly developed (mature) and silky. It completely expresses the Nebbiolo characteristics and thanks to its structure is destined to a long aging, while it keeps on developing.
